Calcium hydroxide Ca(OH)2, also known as slaked lime, is obtained through the action of water on calcium oxide. It may appear as an odourless white powder or in granular form, and is slightly bitter and alkaline in taste. If mixed with water, it dissolves in a small proportion, giving a solution called limewater; the remaining suspension is called milk of lime. Calcium hydroxide easily absorbs carbon dioxide from the air, changing to calcium carbonate (CaCO3). A relatively economical chemical, calcium hydroxide is widely used in production processes that require a base.
Uses of calcium hydroxide include those as an industrial alkali and a component of mortars, plasters, and cement. It is also used in the kraft paper process and as a flocculant in sewage treatment. Uses further entail food processing and medical and dental applications. For example, calcium hydroxide is often present in root canal fillings.
Pickling lime, also known as food-grade calcium hydroxide, is at times used to give pickles an extra crunch. However, pickling lime has been associated with botulism – a rare condition that may lead to paralysis – therefore, its use for pickling is avoided.
Calcium hydroxide is used to process corn, especially in Central America. Raw corn kernels are soaked in water mixed with calcium hydroxide; the process facilitates processing corn into flour, and releases important nutrients such as niacin from corn. Several products made with corn flour (sopes, tortillas, tamales, etc.) carry calcium hydroxide.
Calcium hydroxide is also employed to process some sugars. Sugar cane and sugar beets are at times prepared through carbonatation – a refining process in which an untreated sugar solution is mixed with calcium hydroxide. The process removes impurities and enhances product stability.
Calcium hydroxide is used to fortify fruit juices with calcium and enhance nutritional value.
Calcium hydroxide is very effective in capturing acidic pollutants from industrial smoke and vapours, making is an important component in the management of gases. It is also used as an additive in animal feeds to enhance nutritional value, and also as disinfectant in animal-pens.
In the sugar-industry it can be used to precipitate out impurities and to obtain purified sucrose.

Lime, hydrated lime and limestone-based products effectively capture contaminants. In combination with other components, they help in removing micro-pollutants.
