Three things move the price more than anything else: the Turkish harvest size and quality, the European and North American dried-fruit demand, and how the weather affects the relatively short apricot growing season across the Northern Hemisphere.

The distinction between the dried and fresh markets matters more here than in most fruit categories. Turkey's dried apricots travel well and store for long periods, which lets that trade operate more like a conventional commodity market with forward contracts and inventory carried across seasons. Fresh apricots, the kind Spain and the US mostly sell, have a narrow harvest window and limited shelf life, so pricing there tends to react faster and more sharply to any single week's weather or logistics disruption. That difference shapes how each market participant approaches risk management too.
