High-pressure processing (HPP), also known as high hydrostatic pressure processing, ultra-high-pressure processing, pascalization or cold pasteurisation, is a food processing technology in which high pressure is applied to solid or liquid foods to enhance food safety, and in certain cases, organoleptic properties and quality. In order to undergo high-pressure food processing (HPP) foods must first be pre-packed in vacuum-packs or other flexible packaging like plastic bottles; ceramics, glass or metal are not suitable for the purpose. The chosen packaging should be able to endure high pressures without losing seal integrity or barrier properties. Furter, the material should be such that does not allow leaching of unwanted packaging chemicals into the product. Generally, after a typical high-pressure processing (HPP) operation, the numbers of most vegetative bacteria are reduced by up to 4 log units or more, and inactivate certain enzymes with a minor change in the organoleptic properties of the food. However, resistance of bacteria and other microorganisms to high-pressure processing (HPP) is considerably variable, for example, some gram positive bacteria like Listeria monocytogenes may display higher resistance than gram negative bacteria such as Salmonella.
High-pressure processing (HPP) has several applications. While many types of food are considered suitable for the procedure, foods with high water content such as shellfish, fruit and vegetable juices, fishery products, dips, meat and dairy products, smoothies, jams and baby food are thought to be particularly suitable.
High-pressure processing (HPP) may be applied for:
Spoilage control – High-pressure processing (HPP) may be applied to decrease the microbial load of foods and increase their shelf-life.
Pathogen control – The process is used to eliminate or reduce pathogen levels. However, process process validation is important.
Organoleptic preservation/improvement – High-pressure processing (HPP) is a non-thermal process, therefore, it may conserve or improve foods’ organoleptic properties that may otherwise be compromised when the food is heat treated.
Product reformulation – The process is used to improve the features of reformulated products, such as low salt meats.
Product forming – The high pressures used in the process enable binding or cohesion of small pieces of meat into a larger piece.
Shucking of shellfish – At lower pressures and for shorter durations, the process may be employed for shucking shellfish and other seafood.
Applications of high-pressure processing (HPP) include juices and beverages, baby food, fruit purees, guacamole and avocado products, ready to eat meals, meat products, dairy products, seafood products, pet food, salsas, plant based and fruit products, and pharmaceuticals and cosmetics.
