Ammonium carbonate [(NH4)2CO3], often known as baker's ammonia or hartshorn, is a white crystalline salt. It's water soluble and decomposes in hot water. It decomposes into gaseous ammonia, carbon dioxide, and water vapour when heated. In baked goods like lebkuchen, cookies, and flat biscuits or crackers, ammonium carbonate is employed as a leavening agent.
Ammonium carbonate acts as an acidity regulator and a raising agent when used as a food additive. Ammonium carbonate is an inorganic herbicide, microbiocide, and antifungal. As a preventative fungicide, it prevents entry of fungal spores and diseases into host tissue.
Ammonium carbonate is a key ingredient in smelling salts (stimulants that, when sniffed, irritate nasal and lung membranes). Formerly, smelling salts have been employed by medical practitioners to resuscitate unconscious persons. Currently, smelling salts are used by athletes to enhance sports performance.
