Zein is a water-insoluble plant protein extracted from corn. It is one of the best understood biomacromolecules and classified as GRAS by the US Food and Drug Administration. The unique features of zein include its capability to form odorless, tasteless, clear, hard and almost invisible edible coating. Due to its characteristics, zein forms a very efficacious moisture barrier, and is extensively used in the food and pharma/nutraceutical industries for coating and encapsulation.

Because zein is exceptionally resistant to bacterial attack, it is the ideal coating for extending the shelf life of fresh fruits and vegetables, whole and shelled nuts, and raw protein. Applications of zein protein include extending the shelf-life of nuts and dried fruit, providing a protective surface against loss of internal moisture, edible fats and external effects of oxygen and microbes through encapsulation, coating or encapsulating distasteful elements to mask unpleasant taste, coating powders, flavours and sweeteners for  time release preparations, protecting active ingredients from stomach acids, addition of flavours and additives, and other industrial applications such as (turbine blade repair, paper coating, inks, and biodegradable packaging).

Zein protein has come to be used in a variety of applications, including coatings, polymers, textiles, and adhesives. Recent applications leverage zein's biological characteristics to encourage cell growth, deliver medications, manufacture biodegradable sutures, and manufacture biodegradable polymers.

In 2018, Flo Chemical appointed Thew Arnott to distribute zein protein products across the European countries. The European region is a key contributor to the Zein protein market. FloZein Products (a Flo Chemical Corporation company) is a key zein producer since 1976, and the only North American manufacturer of Zein.

In 2021, a researcher from the University of São Paulo suggested a new way to extract protein from corn which was expected to introduce more bioplastics in the market. The new technique enables efficient extraction of zein, and is expected to allow ethanol plants and bioplastics industries significantly larger profits. Zein extraction through the novel technique enabled production of nearly 100% biodegradable, edible, compostable and recyclable biomaterials, including soap and straws.

In 2021, researchers from Harvard and the Nanyang Technological University developed a zein based, biodegradable waterproof packing which looked exactly like transparent plastic. The smart food packaging was said to gently emit antimicrobials to kill harmful bacteria such as E. coli and Listeria, and help store fish, meat, fruit and vegetables fresher for longer periods of time.
