Honey is a by-product of floral nectar and the honey bee's upper aerodigestive tract, which is concentrated inside the bee hive via a dehydration process. Honey's complex chemical composition changes with the botanical source. Honey has traditionally been used as food as well as medicine.
Apart from its significant place in traditional medicine, natural honey has been the topic of laboratory and clinical research over the last few decades and found a place in modern medicine. Honey has been shown to prevent the growth of approximately 60 kinds of bacteria, certain fungi, and viruses. Honey's antioxidant activity is critical in a variety of diseases; it is a result of a diverse array of chemicals, including phenolics, peptides, organic acids, enzymes, and Maillard reaction products. Honey has further been employed to treat certain gastrointestinal, cardiovascular, inflammatory, and neoplastic conditions.
Honey largely comprises fructose and glucose; it also contains fructo-oligosaccharides, and a variety of amino acids, vitamins, minerals, and enzymes. Honey's composition varies with plants on which the bees forage. Almost all natural honey, on the other hand, contains flavonoids (such as apigenin, pinocembrin, kaempferol, quercetin, galangin, chrysin, and hesperetin), phenolic acids (such as ellagic, caffeic, p-coumaric, and ferulic acids), ascorbic acid, tocopherols, catalase (CAT), superoxide dismutase. The majority of these compounds work synergistically to generate an antioxidant effect.
Honey comes in a range of colour grades and is available raw or pasteurised. It has an average sugar content of roughly 80%. Consuming raw honey has been shown to help with seasonal allergies in certain studies, and honey has also been shown to aid wound healing in others. A significant percentage of the honey produced in India is exported to countries such as USA, Saudi Arabia, UAE, Morocco, Bangladesh, and Canada, among others.
The honey industry is strong in the USA. Locally produced honey and specialty honey have witnessed increasingly strong markets. Premium prices may usually be demanded for honey produced from the nectar of trees like tulip, sourwood, and basswood.
