Butternut squash is grown during the summer and harvested in fall. It has a tough and thick exterior with firm flesh which renders it suitable for longer-term storage.

 

Butternut squash is considered good for digestion, blood pressure, skin and hair. It is said to reduce the risk of obesity, diabetes, heart disease, and overall mortality. Further, butternut squash may improve complexion, enhance energy, and lead to a healthy weight. Butternut squash contains beta-carotene which is said to reduce asthma risk. Consumption of carotenoids (including beta-carotene) is said to reduce the risk of colon cancer. People with type 1 diabetes may experience lower overall blood sugar levels by consuming high-fibre diets; people with type 2 diabetes may improve  improves blood sugar, lipids, and insulin levels by consuming extra fibre.
