Crude coconut oil is pressed from dried coconut kernel, known as copra, then either refined further for food and cosmetic use or sold on as feedstock into the oleochemical industry for surfactants and personal-care ingredients. The Philippines and Indonesia together account for the large majority of world production, with India and Vietnam rounding out the other significant producing and consuming markets. Three things move the price more than anything else: the copra feedstock costs, which track weather and yields across the tropical growing belt, the food and cosmetic-sector demand, and the oleochemical-industry demand for surfactant feedstock.

The copra-drying step deserves some explanation, since it's a genuinely labor-intensive part of this supply chain that shapes both quality and cost. Coconut meat has to be dried, either sun-dried or kiln-dried, before it can be pressed for oil, and the method and quality of that drying step directly affects the free fatty acid content and overall grade of the finished crude oil. That labor and infrastructure dependency has kept coconut-oil production concentrated in smallholder-farming regions across Southeast Asia and South Asia, rather than the larger industrial-scale plantations that dominate palm oil production.
