France paid the most for duck foie gras in Q3 2026: EUR 57.00/KG, down 1.0% from EUR 57.58/KG in Q2. High labor and feed costs, premium quality and steady demand from holiday buyers keep French prices above the other three markets. Worldwide, the average fell 1.3% to EUR 46.12/KG from EUR 46.71/KG, mostly because larger supplies after the recovery from bird flu and softer demand from restaurants led producers and processors to lower prices in all four markets. What about Q4 2026? We expect a global average somewhere in the EUR 44.04-47.73/KG range, with supply of ducks, recovery from bird flu, feed costs and holiday orders from retailers and restaurants doing most of the work.
Duck foie gras is the fattened liver of ducks, mostly mule ducks, raised for the product. It is sold raw, cooked in terrines and as whole lobes, and it is a luxury food served in restaurants and at holiday meals. Prices in this report refer to raw grade A duck foie gras and are quoted per kilogram in euros. They depend on supply of ducks, feed costs and demand from restaurants and retailers.
France makes most of the world supply, followed by Bulgaria, Hungary and Spain. Producers raise ducks for several months, feed them in a final stage and then slaughter and grade the livers by weight and color. Bird flu outbreaks have cut output in recent years, and a vaccination program in France has helped supply recover. Demand peaks before Christmas and the New Year, so processors buy livers from the late summer.
Prices should ease slightly through the rest of 2026. Supply is higher after the recovery from bird flu, but holiday orders limit the size of the decline. Against EUR 45.56/KG in Q3 2025, the current global average of EUR 46.12/KG represents an increase of 1.2%.
For Q4, the risks are weighted toward lower prices. What could push prices higher? New bird flu outbreaks, higher feed costs or strong holiday orders would lift prices. What could pull them lower? Larger supplies, lower feed costs or weaker demand from restaurants would lower prices.
